Sweet home Chicago

Chicago is, along with New York and Los Angeles, one of the three most important cities in the United States, with a rich industrial, economic, and cultural history.

At the beginning of the 20th century, on the shores of the Great Lakes, large industries attracted workers from all over the world, also favoring the Great Migration from the South in the 1920s. It was thus that the culture of blues, originating from the Mississippi Delta area, was massively imported to Chicago. Coffee market also grew enormously, thanks to the numerous factory workers who went in search of an energy drink to recover from the strains of work and music to relieve the homesickness (the term blues itself means “to be melancholic”) of those who leave their homes in search of fortune.

Here, the blues took a new, more electric and urban path, also thanks to the emergence of record labels like Chess Records and electric guitar manufacturers, shaping a style that will be remembered as Chicago Blues, with figures such as Muddy Waters, Buddy Guy, Bo Diddley, leading to Rhythm’n’Blues with Chuck Berry and John Lee Hooker, and so on.

Over the years, the industry has undergone significant transformations, but this cultural ferment has remained unchanged. From Chicago Blues to Rhythm’n’Blues, to 1970s Dance music and 1990s Post-rock, Chicago has always been a global reference point in club-culture, as well as in industry, economy, and architecture.

And this year, Chicago is also a global reference point for coffee culture, hosting the new edition of the Specialty Coffee Expo.

Toward the Far East

After the Dubai fair, we are moving even further East. Last December, thanks to our new local partner, Shika Coffee International, we had been to Hotelex 2023 in Shenzhen, and now we are ready to return to China for the new edition of the hospitality fair in Shanghai.

The Far East has always made us think predominantly of tea rather than coffee, but in fact the coffee market in China has seen tremendous growth in the last two decades, driven mainly by the consumption of young Millennials and GenZ from the big metropolises, attracted by the “western lifestyle.”

So much so that Shanghai itself is now considered one of the coffee capitals of the world, and was even recently listed as the city with the highest number of coffee shops in the world, more than half of which are artisanal and independent.

And according to several analysts, the Chinese market in 2025 will have doubled the volumes of 2022: a huge market in great ferment, capable of infecting even the immense Chinese province and neighboring economies, such as Vietnam. And a market where made in Italy is highly valued, in fact Italian companies are among the main exporters and suppliers in the sector.

Host2023: the new shapes of coffee grinding

From October 13 to 17, two years after the previous post-pandemic edition, Host2023, the important international trade fair where new forms of hospitality, catering, coffee, food&beverage and much more will be discussed, will be held in Milan.

We will be there, too, to talk about the new shapes of coffee grinding, including trends, innovation, technologies, and even sustainability, one of the main themes of this edition.

Coffee grinding and sustainability.

It goes without saying that sustainability – environmental, economic and social – is an inescapable aspect that cuts across all productive and industrial sectors, for the reasons we all know well. But we prefer to talk about grinders, innovation, and technology. This is not because we do not recognize the importance of sustainability; on the contrary. It has always driven our research and development, ever since there was little talk about it. So, talking about our grinders also means talking about sustainability.

In fact, our coffee grinders are in some ways inherently sustainable: they last a long time, they do not produce waste, and in production they do not pollute. Moreover, as a matter of principle, we have always tried to design high-efficiency machines by managing to ensure maximum performance with low energy consumption, low operating temperatures even without cooling systems, and zero coffee waste during startup. Not to mention our Degassing system, developed by BMM Technology: the only one in the world that can reduce nitrogen requirements by as much as 90 percent, compared with other systems.

Host2023

True, we are little used to talking about it, but these results confirm in fact our continuous commitment, innate and concrete, to contribute in our own small way to responsible resource management.

The habit of excellence

Ancient Greece and its great classical thinkers such as Socrates, Plato, Aristotle, Pythagoras, and Heraclitus have deeply influenced every aspect of our culture: from philosophy to theater, from mathematics to geometry. And their works are still rich in inspiration for our work today.

“Excellence is not an act, but is a habit” is one of these.

The meaning of this phrase, vaguely attributed to Aristotle, is that the best skills and virtues are not innate, but derive from experience, repetition, and perseverance. Until they become customary. Or, indeed, a habit.

Philosophy and coffee grinding.

To discomfort Aristotelian ethics in coffee grinding, of course, may be extreme. However, we have been working, with continuity and perseverance, in search of excellence and perfection in our grinders for more than 50 years. And we have gained solid experience. The results prove us right because no one else in the world makes coffee grinders like ours. And our customers are used to our excellence since years.

But we, honestly, are not. We don’t have the habit of excellence. We know that to stay excellent, we have to keep getting better day after day.

The Greece of the great classical thinkers is hosting the next edition of the World of Coffee, where companies, professionals and enthusiasts of the coffee industry and culture meet in Athens from June 22 to 24.

Turkish coffee plant with two Colombini MAC5 grinders and cooling system

Turkish coffee grinding is the most delicate grinding since it is extremely fine. Therefore, the special cutting discs work at a distance of a few tens of microns, and because of the increased friction, the effort increases and consequently the temperature. Which must be kept under control.

Our MAC5 grinder, equipped with a patented system that allows rotation of both grinders, with independent speed adjustment, is the best solution for processing Turkish coffee. This innovative technology, together with an efficient cooling system, enables high performance while greatly containing overheating of the ground coffee.

Production: 750 kg/h

This new plant consists of an insulated, water-cooled extracting auger, and is equipped with two Colombini MAC5 grinders that can grind up to 400 kg/h each, for a total capacity then of 700-800 kg/h of Turkish ground coffee.

The plant is modular and can be implemented with a third grinding unit at any time bringing production to about 1000 kg of Turkish coffee per hour.
